Today it was reported that Apple is supplying an adapted version for Germany because a certain frequency band is not yet active. My question is - are these "German" devices or the US version?

As far as I understand, the US versions will only be available in the US. They will have mmWave 5G (recognisable by the cut-out below the sleep button). The EU version will have 5G but not mmWave 5G.

Exactly. There are 3 versions. USA version with the mmWave frequency bands extra. Then the HK/China version with physical Dual SIM and then for the rest of the world. See above regarding the frequency bands. All frequency bands offered in CH are supported.
