Why does the iPhone now cost CHF 720 instead of CHF 660, although according to the description it is still a showroom model?

You've got the showroom thing wrong. If you order the device, you will receive a new and originally packaged one. The reference to "showroom" only means that you can go and look at an iPhone 13 mini in the showroom.
