With a springform pan, you can release the side wall using a tension lever: the ring opens, allowing you to remove the base of the pan and reinsert it. With a flat base, cakes and tart bases turn out perfectly in the springform. The base with a central chimney replaces a bundt pan for pound cakes and gugelhupf. Unlike other baking pans, the finished cake is not inverted from the springform. Instead, you release the tension lever – the cake separates on its own thanks to the non-stick coating – and lift the ring away.
