Assuming you have a Dream Machie with SFP+, but the switch here only has SFP, can you still connect it via fibre?

Yes, you can connect because SFP+ is backwards compatible. However, the speed is reduced to 1Gbit.

Theoretically you can, but the speed is limited to 1Gbit. I would do it over a normal Cat6 cable or use another Unifi switch (USW-Pro), then it works with 10Gbit.
