Can I set it up as a VPN hotspot if I use a VPN service? I would like all participants to surf via an encrypted connection.

I think technically this AP can do it, but it only works with mobile providers if you have an external IP address. With Sunrise with IPv4, you only get an internal IP and the external IP is not directly in your name. I am not 100% sure about this topic. Theoretically, it should work with IPv6. However, I would clarify this with your provider.
