Does this simply work with UPC Connect router? Do I have to do anything on the box from UPC? - I live in a normal flat approx 120m2 all on one floor - will a Nest WiFi router and satellite/node be sufficient or can I have a Nest WiFi router and 2 satellite/nodes? - any worries about interference or distance between the system? All I want is Mesh that works seamlessly and I have no connection issues or delays

The system should work on any router with a LAN connection. I have a similar sized apartment with difficult conditions (reinforced concrete in all walls). With the nest the reception and the data throughput has improved a lot. I now operate 5 High Res Sound systems with highest resolution without dropouts. This was impossible before. Can recommend two sets, a third one I would get after a test if necessary.

You can use other providers modems/routers without any problem as long as there is a LAN output. Also having a similar sized flat one one floor and I have great connection to the very last corner. I can recommend the product. Before I used google wifi (older product) and this one is even better and has a much longer range. Setup and home control the best part in my opinion!

starting from a similar position (UPC Connect router, 90m2 / one floor) I have just installed this product;
simply connected "Google Nest WiFi-Router" to UPC Connect router via LAN 1 meter away (no customization required);
installed only one access point 2 corners away in last room of my apartment (position in-between inconvenient with my floor plan);
resulted is a 3-bar signal in the entire apartment.
