I have a FiberBox from Sunrise and it's a mess when it comes to wifi. now my question: can I simply plug the UniFi AP AC-Lite into the FiberBox via LAN and operate it with the wifi?

No, the power supply is included in the scope of delivery. It is a POE injector so the network connection must be looped. POE injector in power, LAN cable from router to POE injector and from POE injector with LAN to AP.
