Minimal heat is used to produce a very good yield of cold smoke so that the food can be smoked consistently and evenly. The stainless steel cold smoke generator has four combustion chambers so that a long smouldering time of up to eight hours can be achieved. The duration essentially depends on the quality of the smoking wood.
