Hello Dave Just tested it and it shows both GPUs. I have a GeForce 3080 laptop and a GeForce 3080 TI. On performance, I work a lot with Cinema 4D and the render time is halved when I render with both GPUs. So you probably lose some performance from the external GPU, but for me it's still very worth it.

I am running the Razer Core X with a Radeon RX5700 and a Benq 32" 4K monitor on my MacBook Pro (2016). Connecting a second monitor should not be a problem.
I have a Radeon RX570 in my Core X on the Mac mini and that is more than sufficient for normal desktop applications on my 32-inch 4K monitor. The integrated Intel HD 630 from the mini, on the other hand, is noticeably slower. Since I need full-screen magnification, I noticed this immediately even in normal use. Unfortunately I don't have zoom, but I can play even simpler 3D games in full resolution, so I think zoom should work with the GPU. However, I see that this GPU is currently very expensive (like any GPU), I paid 199 in December 2020, today you can only get it for 249, maybe another user has a better recommendation for you or you can find a good second hand offer.

You need a Thunderbolt connection. USB (before version 4) does not support external graphics cards. An adapter will not help you. In other words, you can put an "Nvidia RTX" sticker on your laptop but it won't make your graphics card any faster.

Yes, a short (30-50cm) active TB3 cable is included. This is massively faster than the passive cables that come with new LG screens, for example. From the laptop to the Core X, either use the supplied cable or buy a longer active cable.
It is normal for Windows to recognise the card without any additional drivers and demand the driver, which is what actually happened, it is recognisable in the Device Manager and marked with a warning triangle. Simply uninstall it and install the original drivers. I would not recommend waiting for Apple, generally always download and install the drivers directly from the hardware manufacturers.
If you have an eGPU connected (to your Mac) you can, as far as I know, prioritise what should run on the eGPU(s) and what should be processed on the internal GPU. If you find Blender in the Finder, in Applications, and right click, select "Information", the option "Prefer external GPU" will be suggested (but only if you have your eGPU connected). There is only one thunderbolt 3 input. The monitors are connected to the installed graphics card.

I have mine working with a Nvidia 2080Ti with three monitors connected (one of them 144Hz), and with Windos10 runs good (4K is not a problem). I was still not able to test on a MAC as none of mine has a Thunderbolt 3 (USB-C) connector, but your Mac Mini 2018 should have it. In my case, it was mandatory to have the latest Nvidia Geforce Drivers installed, in your case it will be AMD Catalyst for Mac OSX. You should check if they are available for you (although in theory it should be possible to make it work with a little bit of extra effort) Anyways, if you want to go for a better Mac & AMD compatibility I'll suggest the 'Sonnet eGFX Breakaway Box 350 (Extern)' (available right now at digitec), or if your budget if not too restricted and want to opt for 100% Mac compatibility, you'll have another options like 'eGPU Pro Blackmagic', that also comes with a Radeon Vega. I assume it fits, so far all Foundation cards have fitted. I'll be getting my Strix 2080 ti at the beginning of Mov, which should fit just fine according to my dimensions.
