Do HDDs of the same size always have to be used in the Synology or can I replace individual hard drives with larger ones later on, for example? And 2nd question: Is it possible to back up to the Google Cloud (not Google Drive) or to Amazon S3?

The HDDs work no matter what size. It is best to use SHR - RAID then the disc size does not matter. With other RAIDs, the maximum size is that of the smallest disc.
Unfortunately I cannot answer the second question.

Hello, can I also access the Synology NAS via WLAN from a Mac? Do I need accessories for this or can I simply connect it to a router/satellite, for example?

The DS1621+ itself has no built-in WLAN. However, you can connect it to a router/satellite via LAN cable and then access the DS1621+ via WLAN. The prerequisite is that the router/satellite is WLAN-capable.
